While most of the tech world is obsessed with training the next massive language model, Cellar Insights is proving that the most impactful AI might actually be the kind that knows when a potato is about to rot. The startup just secured $500,000 in early-stage funding from the SVG Ventures Thrive Pioneer Fund to scale its "smart storage" platform, which uses machine learning to analyze trace gases, CO2 levels, and humidity in real-time. By catching spoilage before it can be smelled or seen by human eyes, CEO Terry Sydoryk and sixth-generation grower Ross Culberson are attempting to save a significant portion of Canadaโ€™s $3.6 billion potato export industry, where nearly 5% of the crop currently goes to waste post-harvest. With active deployments already spanning from Prince Edward Island to Idaho, the company is effectively turning dusty storage bins into data-driven vaults, and they are already eyeing a future where the same "digital nose" protects everything from onions to other long-term produce across North America.
